Ingredients
  

Blackened Mahi Mahi
  • 4 mahi mahi fillets about 6 ounces each
  • 1 tbsp olive oil
  • 2 tsp paprika
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 0.5 tsp oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp cayenne pepper
  • 0.25 tsp ground cumin
Fresh Mango Salsa
  • 2 ripe mangoes diced
  • 0.25 cup red onion finely diced
  • 1 jalapeño seeded and minced
  • 0.25 cup fresh cilantro chopped
  • 1 lime juiced
  • 0.25 tsp salt

Equipment

  • Cast iron skillet

Method
 

  1. Combine all mango salsa ingredients in a bowl and refrigerate.
  2. Mix the blackening spices together in a small bowl.
  3. Pat fish dry, brush with olive oil, and coat with seasoning.
  4. Heat a cast iron skillet over medium-high heat.
  5. Cook fish 4–5 minutes per side until flaky and cooked through.
  6. Rest fish for 2 minutes.
  7. Top with mango salsa and serve immediately.

Notes

Use ripe mangoes and a thoroughly heated skillet for the best flavor and texture.
