White Chicken Lasagna

Ingredients
  

Lasagna
  • 12 lasagna noodles
  • 3 cups cooked shredded chicken
  • 2 cups ricotta cheese
  • 3 cups mozzarella cheese shredded
  • 1 cup parmesan cheese grated
  • 2 cups fresh spinach
White Sauce
  • 3 tbsp butter
  • 3 tbsp flour
  • 3 cups milk
  • 1 cup chicken broth
  • 3 cloves garlic minced
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Preheat oven to 180°C (350°F) and grease baking dish.
  2. Cook noodles according to package instructions and set aside.
  3. Melt butter, sauté garlic, whisk in flour to create roux.
  4. Add milk and broth gradually, whisk until thickened.
  5. Season sauce and simmer until creamy.
  6. Mix ricotta with part of mozzarella and parmesan.
  7. Layer noodles, cheese mixture, chicken, spinach, and sauce.
  8. Repeat layers and top with remaining cheese.
  9. Bake covered 25 minutes, then uncovered 25 minutes until golden.
  10. Rest before slicing and serving.

Notes

You can freeze before baking for up to 3 months.
