Main Salad
  • 4 cups watermelon cubed
  • 1 cup feta cheese crumbled
  • 1/4 cup fresh mint leaves chopped
Dressing
  • 2 tablespoons olive oil
  • 1 tablespoon lime juice fresh
  • 1/4 teaspoon sea salt optional
  • 1/4 teaspoon black pepper

Method
 

  1. Cut watermelon into cubes and chill for 30 minutes.
  2. Crumble feta cheese and chop fresh mint leaves.
  3. Combine watermelon, feta, and mint in a bowl.
  4. Drizzle olive oil and lime juice over the salad.
  5. Season lightly, toss gently, and serve immediately.

Notes

Use ripe, chilled watermelon for best flavor. Add feta just before serving to maintain texture.
