  • 6 cups seedless watermelon cut into cubes
  • 1 cup cucumber sliced into half-moons
  • 3/4 cup feta cheese crumbled
  • 1/4 small red onion thinly sliced
  • 1/4 cup fresh mint leaves torn
  • 2 tablespoons fresh basil leaves optional
Dressing
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon lime juice freshly squeezed
  • 1 teaspoon lime zest
  • black pepper to taste
  • flaky sea salt optional

Method
 

  1. Chill the watermelon thoroughly before preparing the salad for maximum freshness.
  2. Cube the watermelon, slice the cucumber and red onion, and tear the herbs.
  3. Add watermelon, cucumber, and onion to a large bowl and toss gently.
  4. Top with feta cheese, mint, and basil.
  5. Whisk together olive oil, lime juice, lime zest, and black pepper.
  6. Drizzle dressing over the salad and toss lightly before serving.
