Ingredients
  

Lemon Dill Chicken
  • 2 lb boneless skinless chicken breasts
  • 3 tbsp olive oil
  • 2 lemons, juiced
  • 2 tsp lemon zest
  • 4 cloves garlic minced
  • 3 tbsp fresh dill chopped
  • 1 tsp dried oregano
  • 1 tsp sea salt
  • 0.5 tsp black pepper
Herbed Rice
  • 1.5 cups long-grain rice
  • 3 cups chicken broth
  • 1 tbsp olive oil
  • 1 tbsp fresh dill chopped
Toppings
  • 1 cucumber diced
  • 1 cup cherry tomatoes halved
  • 0.5 red onion sliced
  • 0.75 cup kalamata olives
  • 1 cup feta cheese crumbled

Method
 

  1. Combine marinade ingredients and coat chicken thoroughly. Marinate for at least 30 minutes.
  2. Cook rice in chicken broth until tender, then stir in fresh dill.
  3. Cook chicken until internal temperature reaches 165°F and allow to rest before slicing.
  4. Prepare vegetables and lemon dressing.
  5. Assemble bowls with rice, chicken, vegetables, olives, feta, and dressing.

Notes

Fresh dill and freshly squeezed lemon juice provide the best flavor. Store components separately for meal prep.
