Ingredients
  

Main Ingredients
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 2 potatoes diced
  • 1 zucchini chopped
  • 1 cup green beans
  • 1 can diced tomatoes
  • 6 cups vegetable broth
Optional Additions
  • 1 cup corn
  • 1 cup peas

Method
 

  1. Heat olive oil in a large pot and sauté onion until soft.
  2. Add garlic and cook briefly, then add vegetables and stir.
  3. Pour in broth and tomatoes, season, and simmer until vegetables are tender.
