  • 8 slices thick-cut sourdough bread
  • 1 cup sharp cheddar cheese shredded
  • 1 cup mozzarella cheese shredded
  • 1 cup Monterey Jack cheese shredded
  • 4 tbsp unsalted butter softened
  • 2 tbsp mayonnaise
  • 1 pinch sea salt
  • 1 pinch black pepper

  • 2 slices bacon cooked

Method
 

  1. Combine cheddar, mozzarella, and Monterey Jack in a bowl.
  2. Mix softened butter and mayonnaise together.
  3. Spread mixture on bread slices and fill with cheese blend.
  4. Cook sandwiches in a skillet over medium-low heat until golden brown on both sides.
  5. Rest briefly, slice, and serve immediately.
