Ingredients
  

Main Soup Base
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 800 g tomatoes fresh or canned
  • 2 cups broth vegetable or chicken
Seasoning & Finish
  • 1 tsp sugar optional
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup heavy cream
  • 1 tsp basil dried or fresh

Equipment

Method
 

  1. Heat butter and olive oil in a saucepan and sauté onion until soft.
  2. Add garlic and cook until fragrant, then add tomatoes and broth.
  3. Simmer, blend until smooth, and stir in cream before serving.

Notes

For best flavor, use ripe tomatoes and adjust cream for desired richness.
