Ingredients
  

Main Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 3 cloves garlic minced
  • 6 cups tomatoes chopped
  • 2 cups vegetable broth
  • 1 tbsp tomato paste
Finishing Ingredients
  • 0.5 cup heavy cream optional
  • 0.5 cup fresh basil leaves

Equipment

Method
 

  1. Heat olive oil in a pot and sauté onion until soft, then add garlic.
  2. Add tomatoes, broth, and tomato paste, then simmer for 25 minutes.
  3. Blend until smooth, stir in cream and basil, then serve warm.

Notes

For deeper flavor, roast the tomatoes before adding them to the soup.
