Ingredients
  

Cod
  • 4 cod fillets about 6 ounces each
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Roasted Red Pepper Sauce
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 4 cloves garlic minced
  • 2 roasted red peppers
  • 1 cup vegetable broth
  • 1 tbsp tomato paste
  • 1 tbsp lemon juice

Method
 

  1. Season cod fillets with olive oil, paprika, garlic powder, salt, and pepper.
  2. Cook onion and garlic in olive oil, add peppers and broth, then blend until smooth.
  3. Bake cod at 400°F for 12–15 minutes until flaky.
  4. Warm the sauce and serve the cod over the roasted red pepper sauce.

Notes

For best flavor, use fire-roasted red peppers and avoid overcooking the fish.
