  • 1 tsp garlic powder
  • salt and pepper to taste
Taco Meat
  • 1 lb ground beef
  • 1 tbsp olive oil
  • 1 packet taco seasoning
  • 0.5 cup water
Toppings
  • 1 cup chopped lettuce
  • 1 cup diced tomatoes
  • 1 avocado sliced
  • 0.5 cup shredded cheddar cheese
  • 0.5 cup corn
  • 0.5 cup black beans rinsed and drained
  • 0.25 cup red onion chopped
  • fresh cilantro for garnish
Sauces
  • 0.5 cup sour cream
  • lime wedges
  • salsa optional

Method
 

  1. Prepare rice according to package instructions and season with olive oil, garlic powder, salt, and pepper.
  2. Heat olive oil in a skillet and cook ground beef until browned.
  3. Add taco seasoning and water, simmer until thickened.
  4. Prepare and chop all toppings.
  5. Assemble bowls with rice, taco meat, and toppings.
  6. Top with sour cream, salsa, and lime juice, then serve.
