Ingredients
  

Main Filling
  • 6 bell peppers tops removed and seeded
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 1.5 cups tomato sauce
  • 1 tsp Italian seasoning
  • 0.5 tsp paprika
  • salt and pepper to taste
Topping
  • 1 cup shredded cheese mozzarella or cheddar
  • 2 tbsp olive oil
  • fresh parsley for garnish

Method
 

  1. Preheat oven to 375°F and prepare bell peppers by cutting tops and removing seeds.
  2. Cook onion and garlic in skillet, then brown ground beef and drain excess fat.
  3. Mix beef with rice, tomato sauce, and seasonings and simmer briefly.
  4. Stuff mixture into peppers and place in baking dish.
  5. Bake covered for 25 minutes, then uncover, add cheese, and bake 10–15 minutes more.
  6. Garnish with parsley and serve hot.

Notes

You can substitute ground turkey or plant-based meat for a lighter option. Cauliflower rice can be used for a low-carb version.
