Ingredients
  

Cupcake Batter
  • 1.5 cups all-purpose flour
  • 1.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 0.5 cup milk
  • 0.5 cup fresh strawberries chopped
Buttercream Frosting
  • 1 cup unsalted butter softened
  • 3 cups powdered sugar
  • 2 tbsp strawberry puree
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 180°C and line a muffin tin with cupcake liners.
  2. Mix flour, baking powder, and salt in a bowl.
  3. Cream butter and sugar until fluffy, then add eggs and vanilla.
  4. Alternate adding dry ingredients and milk, then fold in strawberries.
  5. Divide batter into liners and bake for 18–22 minutes.
  6. Cool completely before frosting.
  7. Prepare buttercream by beating butter, sugar, and strawberry puree.
  8. Frost cupcakes and garnish as desired.

Notes

Use fresh strawberries for best flavor and avoid overmixing for soft cupcakes.
