Ingredients
  

Strawberry Filling
  • 2 cups fresh strawberries diced
  • 2 tbsp granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch
  • 0.5 tsp vanilla extract
Oat Crumble Base and Topping
  • 1 cup rolled oats
  • 1 cup all-purpose flour
  • 0.5 cup brown sugar
  • 0.25 cup granulated sugar
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.5 tsp ground cinnamon
  • 0.5 cup unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F and line an 8x8 baking dish with parchment paper.
  2. Mix strawberries, sugar, lemon juice, cornstarch, and vanilla in a bowl to create the filling.
  3. Combine oats, flour, sugars, baking powder, salt, and cinnamon.
  4. Add melted butter and vanilla extract and mix until crumbly.
  5. Press most of the crumble mixture into the pan to form the crust.
  6. Spread strawberry filling evenly over the crust.
  7. Sprinkle remaining crumble mixture over the top.
  8. Bake for 35–40 minutes until golden.
  9. Cool completely before slicing into bars.

Notes

Allow the bars to cool fully before cutting for clean slices. Try adding almonds or swapping strawberries with mixed berries.
