- Preheat oven to 350°F and line an 8x8 baking dish with parchment paper.
- Mix strawberries, sugar, lemon juice, cornstarch, and vanilla in a bowl to create the filling.
- Combine oats, flour, sugars, baking powder, salt, and cinnamon.
- Add melted butter and vanilla extract and mix until crumbly.
- Press most of the crumble mixture into the pan to form the crust.
- Spread strawberry filling evenly over the crust.
- Sprinkle remaining crumble mixture over the top.
- Bake for 35–40 minutes until golden.
- Cool completely before slicing into bars.
Notes
Allow the bars to cool fully before cutting for clean slices. Try adding almonds or swapping strawberries with mixed berries.
