  • 1 tsp baking powder
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 2 eggs
  • 1 tbsp lemon zest
  • 0.25 cup lemon juice fresh
  • 0.5 cup milk
  • 1 tsp vanilla extract
  • 1 cup strawberries diced
Lemon Glaze
  • 1 cup powdered sugar
  • 3 tbsp lemon juice
  • 0.5 tsp lemon zest optional

Method
 

  1. Preheat oven to 175°C (350°F) and prepare a lined loaf pan.
  2. Whisk together flour, baking powder, baking soda, and salt.
  3. Cream butter and sugar until fluffy, then add eggs, lemon zest, juice, and vanilla.
  4. Alternate adding dry ingredients and milk into the batter, mixing gently.
  5. Fold in diced strawberries and transfer batter to the pan.
  6. Bake for 50–60 minutes until a toothpick comes out clean.
  7. Cool completely, then drizzle with lemon glaze before serving.

Notes

For best results, use fresh strawberries and avoid overmixing the batter to maintain a soft texture.
