Ingredients
  

Cream Filling
  • 2 cups heavy whipping cream cold
  • 8 oz cream cheese softened
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
Cake Layers
  • 2 lbs fresh strawberries washed and sliced
  • 2 sleeves graham crackers
Optional Garnishes
  • whipped cream for topping
  • crushed graham crackers for garnish

Equipment

Method
 

  1. Wash, dry, and slice the strawberries. Reserve some slices for decorating.
  2. Beat cream cheese, powdered sugar, and vanilla until smooth.
  3. Whip the heavy cream to stiff peaks in a chilled bowl.
  4. Fold whipped cream into the cream cheese mixture gently.
  5. Spread a thin layer of cream mixture into the baking dish and add a layer of graham crackers.
  6. Top with cream filling and sliced strawberries.
  7. Repeat layers until ingredients are used, finishing with cream on top.
  8. Decorate with strawberries and crushed graham crackers.
  9. Cover and refrigerate overnight before slicing and serving chilled.

Notes

For the best texture, chill overnight so the graham crackers soften completely into cake-like layers.
