Ingredients
  

Crust
  • 1.5 cups graham cracker crumbs
  • 0.33 cup butter melted
  • 0.25 cup sugar
Cheesecake Filling
  • 16 oz cream cheese softened
  • 0.5 cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • 0.5 cup heavy cream
Strawberry Topping
  • 2 cups strawberries sliced
  • 0.25 cup sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch optional

Equipment

Method
 

  1. Preheat oven to 175°C and prepare the crust by mixing crumbs, sugar, and butter, then press into tart pan.
  2. Bake crust for 10 minutes and let cool completely.
  3. Beat cream cheese and sugar, add eggs, vanilla, and cream, then mix until smooth.
  4. Pour filling into crust and bake for 30–35 minutes until slightly set.
  5. Cool gradually, then refrigerate for at least 3 hours.
  6. Cook strawberries with sugar and lemon juice, thicken if desired, then cool.
  7. Top chilled tart with strawberry mixture and serve.

Notes

For best results, chill overnight and use fresh ripe strawberries.
