Ingredients
  

Cookie Cups
  • 1 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
Cheesecake Filling
  • 8 ounces cream cheese softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
Strawberry Topping
  • 1 1/2 cups fresh strawberries diced
  • 2 tablespoons granulated sugar
  • 1 teaspoon lemon juice

Equipment

Method
 

  1. Combine diced strawberries with sugar and lemon juice and let sit for 20 minutes.
  2. Prepare cookie dough, press into muffin pan cavities, and bake at 350°F for 10–12 minutes.
  3. Cool cookie cups completely and reinforce cup shape while warm.
  4. Beat cream cheese, powdered sugar, and vanilla until smooth.
  5. Whip cream separately and fold into cream cheese mixture.
  6. Pipe filling into cookie cups and top with strawberries.
  7. Chill for 30 minutes before serving.

Notes

For best results, assemble shortly before serving to maintain the perfect cookie texture.
