Salad
  • 8 cups baby spinach
  • 1 cup strawberries sliced
  • 1/2 cup feta cheese crumbled
  • 1/2 cup pecans toasted
  • 1/4 red onion thinly sliced
Dressing
  • 3 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Method
 

  1. Wash and dry the spinach thoroughly and place it in a large bowl.
  2. Prepare strawberries, onion, feta, and toasted pecans.
  3. Whisk together dressing ingredients until smooth.
  4. Add toppings to spinach and drizzle with dressing.
  5. Toss gently and serve immediately.

Notes

For best texture, add the dressing just before serving so the spinach stays crisp.
