Ingredients
  

Lamb Kofta
  • 1 lb ground lamb
  • 1 small onion finely grated
  • 3 cloves garlic minced
  • 1/4 cup fresh parsley chopped
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • 1/2 tsp ground cinnamon
  • 1 tsp salt
  • 1/2 tsp black pepper
Rice
  • 1 cup basmati rice
  • 2 cups water or chicken broth
  • 1 tbsp olive oil
Yogurt Sauce
  • 1 cup plain yogurt
  • 1 tbsp lemon juice
  • 1 clove garlic minced

Method
 

  1. Rinse basmati rice under cold water until clear. Cook with water or broth and salt in a saucepan until tender and fluffy.
  2. In a bowl combine ground lamb, grated onion, garlic, parsley, cumin, coriander, paprika, cinnamon, salt, and pepper.
  3. Shape the mixture into sausage-shaped kofta or form around skewers.
  4. Cook kofta in a hot skillet or grill for about 4–5 minutes per side until browned and cooked through.
  5. Mix yogurt, lemon juice, and garlic in a bowl to create the sauce.
  6. Serve kofta over rice with yogurt sauce and optional fresh garnishes.

Notes

For best flavor, allow the kofta mixture to rest in the refrigerator for 10 minutes before cooking. This helps the spices blend and improves texture.
