- Rinse basmati rice under cold water until clear. Cook with water or broth and salt in a saucepan until tender and fluffy.
- In a bowl combine ground lamb, grated onion, garlic, parsley, cumin, coriander, paprika, cinnamon, salt, and pepper.
- Shape the mixture into sausage-shaped kofta or form around skewers.
- Cook kofta in a hot skillet or grill for about 4–5 minutes per side until browned and cooked through.
- Mix yogurt, lemon juice, and garlic in a bowl to create the sauce.
- Serve kofta over rice with yogurt sauce and optional fresh garnishes.
Notes
For best flavor, allow the kofta mixture to rest in the refrigerator for 10 minutes before cooking. This helps the spices blend and improves texture.
