  • 1 lb ground beef lean preferred
  • 1 tbsp olive oil
Vegetables
  • 2 medium sweet potatoes peeled and diced
  • 1 yellow onion diced
  • 1 red bell pepper chopped
  • 3 cloves garlic minced
Southwest Seasoning
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 1/2 tsp chili powder
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/4 tsp cayenne pepper optional
Optional Add-ins
  • 1 cup black beans drained and rinsed
  • 1 cup corn
  • 1/2 cup diced tomatoes optional

Method
 

  1. Cook diced sweet potatoes in a hot skillet until lightly golden and beginning to soften.
  2. Add ground beef and cook until browned and fully cooked through.
  3. Stir in onion, bell pepper, and garlic and cook until softened and fragrant.
  4. Add spices and mix well to coat all ingredients evenly.
  5. Mix in beans, corn, and tomatoes, then simmer until sweet potatoes are tender.
  6. Finish with lime juice and serve with your favorite toppings.

Notes

For best flavor, allow spices to bloom in the pan before adding liquids. Adjust heat level with cayenne or chipotle.
