- Combine ground chicken, breadcrumbs, egg, garlic, Worcestershire sauce, paprika, onion powder, oregano, salt, pepper, and olive oil in a bowl.
- Mix gently until combined and shape into 4 burger patties.
- Chill patties for 15–20 minutes to help them hold their shape.
- Preheat grill to medium-high heat and lightly oil the grates.
- Grill patties for 5–6 minutes per side until fully cooked to 165°F.
- Add cheddar cheese during the final minute of cooking.
- Toast brioche buns until lightly golden.
- Assemble burgers with lettuce, tomato, onion, pickles, and garlic mayo.
