Ingredients
  

Smoked Peach Salsa
  • 4 ripe peaches halved and pitted
  • 3 Roma tomatoes
  • 2 jalapeños
  • 1 small red onion finely diced
  • 2 cloves garlic
  • 1 tablespoon olive oil
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon ground cumin
  • 2 limes juiced
  • 1 tablespoon honey
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup fresh cilantro chopped
  • 1 tablespoon apple cider vinegar

Method
 

  1. Preheat the grill to medium-high heat and lightly oil the grates.
  2. Brush peaches, tomatoes, jalapeños, and garlic with olive oil.
  3. Grill peaches cut-side down until caramelized and char tomatoes and jalapeños until blistered.
  4. Allow grilled ingredients to cool slightly before chopping.
  5. Dice peaches and finely chop tomatoes, jalapeños, and garlic.
  6. Combine all ingredients in a mixing bowl and stir well.
  7. Adjust seasoning to taste and refrigerate for 30 minutes before serving.

Notes

For deeper smoky flavor, use applewood chips while grilling the peaches and vegetables.
