Ingredients
  

Smash Burgers
  • 2 pounds halal ground beef 80/20 fat ratio preferred
  • 1 teaspoon kosher salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 8 slices cheddar cheese
  • 4 burger buns sesame seed buns preferred
  • 2 tablespoons unsalted butter for toasting buns
Burger Toppings
  • 1 cup shredded iceberg lettuce
  • 1 tomato sliced
  • 12 slices dill pickles
  • 1 onion thinly sliced
Burger Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons ketchup
  • 1 tablespoon mustard
  • 1 tablespoon pickle relish
  • 1/2 teaspoon smoked paprika

Equipment

  • Cast iron skillet

  • Mixing bowl

Method
 

  1. Whisk together all burger sauce ingredients and refrigerate until needed.
  2. Divide the halal ground beef into 8 loose balls without compacting the meat.
  3. Heat a cast iron skillet over high heat until very hot.
  4. Butter and toast the burger buns until golden brown.
  5. Place beef balls onto the skillet and immediately smash them thin using a metal spatula.
  6. Season patties with salt, pepper, and garlic powder while cooking.
  7. Cook undisturbed for 2–3 minutes until crispy edges form.
  8. Flip patties, top with cheese, and cook another 1–2 minutes.
  9. Assemble burgers with sauce, toppings, and double patties on toasted buns.

Notes

Use high heat and avoid overcrowding the skillet for the crispiest smash burger edges.
