Ingredients
  

Beef Mixture
  • 2 lb beef chuck roast trimmed
  • 1 large yellow onion sliced
  • 1 large green bell pepper sliced
  • 1 large red bell pepper sliced
  • 4 cloves garlic minced
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
Casserole Assembly
  • 12 oz rotini pasta cooked al dente
  • 8 oz cream cheese softened
  • 2 cups provolone cheese shredded
  • 1 cup mozzarella cheese shredded
  • 2 tbsp fresh parsley chopped

Equipment

  • Slow cooker
  • Wooden spoon
  • Large pot

Method
 

  1. Place onions and peppers in the slow cooker and top with seasoned beef.
  2. Add broth, Worcestershire sauce, and garlic. Cook on low for 7-8 hours.
  3. Shred beef and return it to the slow cooker.
  4. Stir in cream cheese until melted and smooth.
  5. Add cooked pasta and half of the cheeses. Mix thoroughly.
  6. Top with remaining cheese and cook until melted before serving.

Notes

For the richest flavor, use freshly shredded provolone and allow the casserole to rest for five minutes before serving.
