Ingredients
  

Muffin Base
  • 6 eggs large
  • 1 cup all-purpose flour
  • 1 cup fresh spinach chopped
  • 3/4 cup feta cheese crumbled
  • 1/2 cup milk
  • 2 tbsp olive oil
  • 1 onion finely diced
  • 2 cloves garlic minced
Seasoning
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme

Method
 

  1. Preheat oven to 375°F (190°C) and grease a 12-cup muffin tin.
  2. Sauté onion in olive oil until soft, then add garlic and cook briefly.
  3. Add chopped spinach and cook until wilted. Let cool.
  4. Whisk eggs and milk together in a bowl.
  5. Mix flour, baking powder, salt, pepper, oregano, and thyme.
  6. Combine dry ingredients with egg mixture until just blended.
  7. Fold in spinach mixture and feta cheese.
  8. Divide batter evenly into muffin cups.
  9. Bake 20–25 minutes until golden and set.
  10. Cool slightly before serving.
