Ingredients
  

Crust
  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter melted
  • 2 tablespoons granulated sugar
Filling
  • 24 oz cream cheese softened
  • 1 cup granulated sugar
  • 3 eggs room temperature
  • 3/4 cup heavy cream
  • 1 tablespoon vanilla extract
Salted Caramel
  • 1 cup granulated sugar
  • 6 tablespoons unsalted butter
  • 1/2 cup heavy cream warmed
  • 1 teaspoon flaky sea salt

Equipment

  • 9-inch springform pan

Method
 

  1. Preheat oven to 325°F and bake prepared crust for 10 minutes.
  2. Beat cream cheese and sugar until smooth, then add eggs one at a time.
  3. Bake cheesecake in a water bath for 60–70 minutes, cool gradually, chill, then top with salted caramel.

Notes

Use room temperature ingredients and avoid overmixing for best texture.
