Ingredients
  

Champagne Cake Layer
  • 1 vanilla sponge cake cubed
  • 1 cup rosé champagne
Mascarpone Cream
  • 16 oz mascarpone cheese softened
  • 2 cups heavy whipping cream
  • 1 cup powdered sugar
  • 2 tsp vanilla extract
Fruit & Garnish
  • 2 cups fresh strawberries sliced
  • 6 oz white chocolate shaved
  • mint leaves for garnish

Method
 

  1. Cut sponge cake into cubes and drizzle lightly with champagne.
  2. Beat mascarpone, powdered sugar and vanilla until smooth.
  3. Whip cream to stiff peaks and fold into mascarpone mixture.
  4. Layer cake, cream, strawberries and white chocolate in a trifle bowl.
  5. Repeat layers until bowl is full.
  6. Garnish and chill at least 4 hours before serving.

For best flavor, prepare one day in advance.
