- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Toss sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange in a single layer on the baking sheet.
- Roast for 20 minutes, flip, then roast another 10–12 minutes until tender and caramelized.
- Transfer to a serving platter and top with crumbled feta cheese.
- Drizzle with honey and garnish with parsley, thyme, and red pepper flakes.
- Serve warm and enjoy.
Notes
For extra flavor, use hot honey or add toasted walnuts before serving.
