Ingredients
  

Sweet Potato Base
  • 2 large sweet potatoes sliced into 1/2-inch rounds
  • 2 tbsp olive oil
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper
Toppings
  • 1/3 cup feta cheese crumbled
  • 2 tbsp honey
  • 2 tbsp fresh parsley chopped
  • 1/4 tsp red pepper flakes optional
  • 1 tsp fresh thyme leaves optional garnish

Method
 

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Toss sweet potato rounds with olive oil, salt, and pepper until evenly coated.
  3. Arrange in a single layer on the baking sheet.
  4. Roast for 20 minutes, flip, then roast another 10–12 minutes until tender and caramelized.
  5. Transfer to a serving platter and top with crumbled feta cheese.
  6. Drizzle with honey and garnish with parsley, thyme, and red pepper flakes.
  7. Serve warm and enjoy.

Notes

For extra flavor, use hot honey or add toasted walnuts before serving.
