Ingredients
  

Hummus Base
  • 1.5 cups chickpeas drained and rinsed
  • 1 large roasted red pepper peeled and seeded
  • 1/4 cup tahini
  • 2 tbsp lemon juice freshly squeezed
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp salt or to taste
Optional Garnish
  • 1 tbsp olive oil for drizzle
  • 1/4 tsp smoked paprika
  • 1 tbsp parsley chopped

Equipment

Method
 

  1. Drain and rinse chickpeas thoroughly under cold water.
  2. Add chickpeas, roasted red pepper, tahini, lemon juice, garlic, olive oil, cumin, paprika, and salt to a food processor.
  3. Blend until creamy, adding cold water gradually until smooth and fluffy.
  4. Taste and adjust seasoning as desired.
  5. Transfer to a serving bowl, drizzle with olive oil, and garnish before serving.

Notes

For ultra-smooth hummus, peel chickpea skins and blend longer. Adjust lemon juice and garlic to taste.
