- Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
- Place peeled and cut potato wedges into the baking dish in a single layer.
- In a bowl whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, pepper, paprika, and broth.
- Pour the lemon mixture over the potatoes and toss gently to coat.
- Roast for 30 minutes, flip potatoes, then roast another 25 minutes until golden and tender.
- Broil for 3–4 minutes if extra crispiness is desired.
- Garnish with chopped parsley and serve hot.
Notes
For crispier potatoes avoid overcrowding the pan and use fresh lemon juice for best flavor.
