Ingredients
  

Main Potatoes
  • 2 lb Yukon Gold potatoes peeled and cut into wedges
  • 4 tbsp olive oil
  • 4 cloves garlic minced
Lemon Herb Sauce
  • 1/3 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1 cup vegetable broth or chicken broth
  • 1 tsp dried oregano
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp paprika optional
  • 2 tbsp fresh parsley chopped for garnish

Method
 

  1. Preheat oven to 400°F (200°C) and lightly grease a large baking dish.
  2. Place peeled and cut potato wedges into the baking dish in a single layer.
  3. In a bowl whisk together olive oil, lemon juice, lemon zest, garlic, oregano, salt, pepper, paprika, and broth.
  4. Pour the lemon mixture over the potatoes and toss gently to coat.
  5. Roast for 30 minutes, flip potatoes, then roast another 25 minutes until golden and tender.
  6. Broil for 3–4 minutes if extra crispiness is desired.
  7. Garnish with chopped parsley and serve hot.

Notes

For crispier potatoes avoid overcrowding the pan and use fresh lemon juice for best flavor.
