- Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
- Let the garlic cool slightly, then squeeze the roasted cloves from the skins into a bowl and mash into a paste.
- In a mixing bowl combine Greek yogurt, lemon juice, olive oil, salt, and pepper.
- Add the mashed roasted garlic and stir until smooth and evenly combined.
- Mix in chopped parsley and optional honey if desired.
- Refrigerate for 20–30 minutes before serving to allow flavors to develop.
Notes
For best texture use thick Greek yogurt. Add fresh herbs or spices to customize the flavor.
