Ingredients
  

Main Component
  • 1 garlic bulb top sliced
  • 1 tbsp olive oil for roasting
  • 1 cup plain Greek yogurt
  • 1 tbsp lemon juice
  • 1 tsp olive oil for mixing
  • 1/2 tsp salt
  • 1/4 tsp black pepper
Optional Additions
  • 1 tbsp fresh parsley chopped
  • 1 tsp honey optional sweetness

Method
 

  1. Preheat oven to 400°F (200°C). Slice the top off the garlic bulb, drizzle with olive oil, wrap in foil, and roast for 35–40 minutes until soft.
  2. Let the garlic cool slightly, then squeeze the roasted cloves from the skins into a bowl and mash into a paste.
  3. In a mixing bowl combine Greek yogurt, lemon juice, olive oil, salt, and pepper.
  4. Add the mashed roasted garlic and stir until smooth and evenly combined.
  5. Mix in chopped parsley and optional honey if desired.
  6. Refrigerate for 20–30 minutes before serving to allow flavors to develop.

Notes

For best texture use thick Greek yogurt. Add fresh herbs or spices to customize the flavor.
