Ingredients
  

Main Chicken
  • 1 whole chicken 1.5–2 kg
  • 3 tbsp olive oil or butter
  • 4 cloves garlic minced
  • 1 lemon halved
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp thyme
  • 1 tsp rosemary
Vegetables
  • 1 onion quartered
  • 3 carrots chopped
  • 3 potatoes chopped

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Pat the chicken dry and rub with seasoned oil mixture.
  3. Stuff with lemon and onion, place over vegetables, and roast for 75–90 minutes until cooked through.

Notes

Let the chicken rest before carving for juicier meat. Baste occasionally for extra flavor.
