Ingredients
  

Ravioli
  • 1 lb cheese ravioli
  • 1 tbsp salt for pasta water
Tomato Sauce
  • 2 tbsp olive oil
  • 1 small onion finely diced
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 2 tbsp tomato paste
  • 1 tsp sugar
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes optional
  • 1/4 cup fresh basil chopped
Garnish
  • Parmesan cheese grated
  • fresh basil leaves

Equipment

  • Large pot
  • Saucepan

Method
 

  1. Bring a large pot of salted water to a boil.
  2. Heat olive oil in a saucepan and cook onion until soft.
  3. Add garlic and cook until fragrant.
  4. Stir in tomatoes, tomato paste, sugar, and seasonings.
  5. Simmer the sauce for 20 minutes, then stir in basil.
  6. Cook ravioli according to package directions and drain gently.
  7. Add ravioli to the sauce and toss carefully.
  8. Serve with Parmesan and basil.

Notes

Avoid overcooking the ravioli to prevent them from bursting. Fresh basil gives the best flavor.
