  • 300 g Oaxaca cheese shredded
  • 200 g Mexican chorizo casing removed
  • 1 onion finely diced
  • 2 cloves garlic minced
  • 1 jalapeño sliced
  • 1 tbsp olive oil
  • 2 tbsp fresh cilantro chopped

  • Cast iron skillet
  • Spatula

Method
 

  1. Heat oil in a skillet over medium heat.
  2. Cook chorizo until browned, then remove and set aside.
  3. Sauté onion, garlic, and jalapeño until softened.
  4. Lower heat and add shredded cheese evenly in the skillet.
  5. Top with cooked chorizo and allow cheese to melt completely.
  6. Broil briefly if desired for a golden top.
  7. Garnish with cilantro and serve hot with tortillas.

Notes

Serve immediately for best texture. Cheese will firm as it cools.
