Ingredients
  

Soup Base
  • 2 lb pumpkin peeled and cubed
  • 1 medium onion chopped
  • 3 cloves garlic minced
  • 2 tbsp olive oil
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 tbsp maple syrup
Optional Garnish
  • 2 tbsp pumpkin seeds toasted

Method
 

  1. Heat olive oil in a saucepan and cook onion until softened.
  2. Add garlic and pumpkin, then pour in broth and simmer until pumpkin is tender.
  3. Blend until smooth, stir in cream and seasonings, then simmer gently before serving.

Notes

For extra flavor, roast the pumpkin before adding it to the soup.
