  • 1 kg potatoes peeled and chopped
  • 3 eggs hard-boiled
  • 1 cup mayonnaise
  • 2 tbsp yellow mustard
  • 1 tbsp apple cider vinegar

  • 1/2 cup celery chopped
  • 1/4 cup red onion chopped
  • 2 tbsp parsley chopped
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika plus extra for garnish

Method
 

  1. Boil potatoes in salted water until fork-tender, then drain and cool.
  2. Cook eggs, peel, and chop them into small pieces.
  3. Mix mayonnaise, mustard, vinegar, salt, and pepper in a bowl.
  4. Combine potatoes, eggs, celery, and onion with the dressing.
  5. Add parsley, mix gently, and garnish with paprika.
  6. Chill for at least 1 hour before serving.

Notes

For best flavor, refrigerate for a few hours before serving. Adjust seasoning as needed.
