Method
- Season beef roast with salt and pepper.
- Sear roast in olive oil until browned on all sides.
- Sauté onions and garlic in same pot.
- Add tomato paste and Worcestershire sauce.
- Pour in beef broth and add herbs.
- Return roast to pot and add vegetables.
- Cover and cook at 325°F for 3–3.5 hours.
- Rest, slice, and serve with gravy.
Notes
For deeper flavor, add red wine or extra herbs.
