Ingredients
  

Roast
  • 1 3-4 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
Vegetables
  • 1 onion chopped
  • 4 cloves garlic minced
  • 4 carrots chunked
  • 4 potatoes halved
Broth & Flavor
  • 2 cups beef broth
  • 1 tbsp tomato paste
  • 1 tbsp Worcestershire sauce
  • 2 tsp thyme
  • 2 tsp rosemary
  • 2 bay leaves

Equipment

  • Dutch oven
  • Knife
  • Cutting board
  • Wooden spoon

Method
 

  1. Season beef roast with salt and pepper.
  2. Sear roast in olive oil until browned on all sides.
  3. Sauté onions and garlic in same pot.
  4. Add tomato paste and Worcestershire sauce.
  5. Pour in beef broth and add herbs.
  6. Return roast to pot and add vegetables.
  7. Cover and cook at 325°F for 3–3.5 hours.
  8. Rest, slice, and serve with gravy.

Notes

For deeper flavor, add red wine or extra herbs.
