Ingredients
  

Pasta & Sauce
  • 400 g penne pasta
  • 2 tbsp extra virgin olive oil
  • 4 cloves garlic thinly sliced
  • 1 tsp red chili flakes adjust to taste
  • 800 g crushed tomatoes
  • 0.5 tsp salt or to taste
  • 0.5 tsp black pepper freshly ground
Garnish
  • 2 tbsp fresh parsley chopped
  • 0.5 cup Parmesan cheese grated, optional

Equipment

  • Large pot
  • Large skillet
  • Wooden spoon

Method
 

  1. Bring a large pot of salted water to a boil and cook penne until al dente. Reserve 1/2 cup pasta water and drain.
  2. Heat olive oil in a skillet over medium heat. Add garlic and cook gently until fragrant.
  3. Stir in chili flakes, then add crushed tomatoes, salt, and pepper. Simmer 15–20 minutes.
  4. Add drained pasta to sauce and toss. Use reserved pasta water as needed.
  5. Garnish with parsley and Parmesan before serving.

Notes

Adjust chili flakes to control heat level. Use high-quality tomatoes and olive oil for best flavor.
