Peach Filling
  • 8 fresh peaches peeled and sliced
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp lemon juice
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 2 tbsp cornstarch
Cobbler Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup unsalted butter melted
  • 1 tsp vanilla extract

Method
 

  1. Preheat the oven to 350°F and grease a 9x13-inch baking dish.
  2. Mix peaches, sugars, lemon juice, vanilla, cinnamon, nutmeg, and cornstarch in a large bowl.
  3. Whisk together flour, sugar, baking powder, salt, milk, and vanilla until smooth.
  4. Pour melted butter into the baking dish, then pour batter over the butter without stirring.
  5. Spoon peach mixture evenly over the batter and bake for 45–50 minutes until golden brown.
  6. Cool slightly before serving warm with vanilla ice cream.

Notes

For extra flavor, sprinkle brown sugar and cinnamon over the top before baking.
