Ingredients
  

Pancake Batter
  • 1.5 cups all-purpose flour
  • 3.5 teaspoons baking powder
  • 1 tablespoon granulated sugar
  • 0.25 teaspoon salt
  • 1.25 cups whole milk
  • 1 large egg
  • 3 tablespoons unsalted butter melted
  • 1 teaspoon vanilla extract
For Serving
  • 0.5 cup maple syrup warmed
  • 2 tablespoons butter

Method
 

  1. Whisk together flour, baking powder, sugar, and salt in a large bowl.
  2. In another bowl, whisk milk, egg, melted butter, and vanilla extract.
  3. Combine wet and dry ingredients gently until just mixed, then let rest for 5 minutes.
  4. Heat a greased skillet over medium heat and pour 1/4 cup batter for each pancake.
  5. Cook until bubbles form, flip, and cook until golden brown.
  6. Serve warm with butter and maple syrup.

Notes

Do not overmix the batter to keep the pancakes light and fluffy.
