Ingredients
  

Main Components
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 1 zucchini diced
  • 1 cup green beans cut
  • 1 can diced tomatoes
  • 4 cups vegetable broth
  • 1 can kidney beans drained
  • 1 cup small pasta
  • 1 tsp oregano
  • 1 tsp basil
  • salt and pepper to taste
Optional Additions
  • 2 cups spinach or kale
  • parmesan cheese for garnish

Equipment

  • Large pot

Method
 

  1. Heat olive oil in a large pot and sauté onion until softened.
  2. Add garlic, carrots, and celery, cooking until fragrant.
  3. Stir in zucchini and green beans, then add tomatoes and broth.
  4. Add beans, herbs, and seasoning, then simmer.
  5. Cook pasta in the soup until tender.
  6. Add spinach, cook briefly, and serve hot.

Notes

For best results, cook pasta separately if storing leftovers to avoid sogginess.
