Ingredients
  

Main Salad
  • 2 cups chickpeas cooked or canned, drained
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.5 cup red onion finely diced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup fresh parsley chopped
Lemon Dressing
  • 3 tbsp olive oil extra virgin
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Method
 

  1. Place chickpeas in a large mixing bowl.
  2. Add diced cucumber, cherry tomatoes, red onion, parsley, and feta cheese.
  3. Whisk olive oil, lemon juice, lemon zest, oregano, salt, and pepper to make the dressing.
  4. Pour dressing over the salad and toss gently until evenly coated.
  5. Taste and adjust seasoning if needed, then serve or chill for 20 minutes.

Notes

Allowing the salad to rest for 20 minutes enhances the flavor as the dressing absorbs into the chickpeas and vegetables.
