Ingredients
  

Salad Base
  • 2 mangoes peeled and diced
  • 2 cucumbers sliced
  • 1/4 red onion thinly sliced
Dressing
  • 2 tbsp lime juice
  • 1 tbsp olive oil
  • 1 tbsp honey optional
  • 1/4 tsp chili flakes
  • salt to taste
Garnish
  • fresh mint chopped
  • cilantro optional

Method
 

  1. Dice mangoes, slice cucumbers, and thinly slice red onion.
  2. Combine all salad base ingredients in a large bowl.
  3. Whisk dressing ingredients in a separate bowl.
  4. Pour dressing over salad and toss gently.
  5. Add fresh herbs and serve immediately or chilled.

Notes

Use ripe mangoes for best sweetness and chill before serving for maximum refreshment.
