Ingredients
  

Chia Pudding Base
  • 1/4 cup chia seeds
  • 1 cup coconut milk or almond milk
  • 1 tbsp honey or maple syrup
  • 1/2 tsp vanilla extract
Mango Layer & Toppings
  • 1 cup mango puree fresh or blended
  • 1/2 cup fresh mango cubes
  • 1 tbsp shredded coconut optional

Equipment

  • Mixing bowl
  • spoon or whisk
  • glass jars

Method
 

  1. Mix chia seeds, coconut milk, sweetener, and vanilla extract in a bowl.
  2. Let sit for 5 minutes, stir again, then refrigerate for at least 4 hours or overnight.
  3. Blend mango into a puree and layer it with the chia pudding before serving.

Notes

Stir the chia mixture twice to avoid clumping and use ripe mangoes for best flavor.
