- Preheat oven to 425°F and season diced potatoes with oil and spices.

- Cook onion and garlic in a skillet, then brown the ground beef.
- Add taco seasoning and water, simmer until thickened.
- Divide roasted potatoes among bowls and top with taco beef.
- Add cheese, tomatoes, avocado, sour cream, cilantro, and green onions.
- Serve immediately with lime wedges.
