Ingredients
  

Main Soup
  • 1 cup lentils rinsed
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 1 zucchini diced
  • 1 can diced tomatoes
  • 6 cups vegetable broth
Seasoning & Finish
  • 1 tsp cumin
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp turmeric optional
  • 2 cups spinach
  • 1/2 lemon juiced

Equipment

  • Large pot
  • Ladle
  • Cutting board

Method
 

  1. Heat olive oil in a large pot and sauté onion until translucent.
  2. Add garlic, carrots, celery and cook until fragrant.
  3. Stir in spices, lentils, tomatoes, and broth then simmer until lentils are tender.
  4. Add zucchini and cook a few more minutes.
  5. Stir in spinach and finish with lemon juice before serving.

Notes

For extra flavor, let the soup sit for a few hours before serving. It tastes even better the next day.
