Ingredients
  

Main Soup
  • 1 cup lentils rinsed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 carrots diced
  • 2 celery stalks chopped
  • 1 can diced tomatoes
  • 4 cups vegetable broth
Seasoning
  • 1 tsp cumin
  • 1 tsp paprika
  • 0.5 tsp turmeric optional
  • 1 bay leaf
  • salt and pepper to taste

Method
 

  1. Heat olive oil in a pot and sauté onion until soft.
  2. Add garlic, carrots, and celery and cook for 5 minutes.
  3. Stir in spices and cook briefly.
  4. Add lentils, tomatoes, broth, and bay leaf, then bring to a boil.
  5. Simmer for 25–30 minutes until lentils are tender.
  6. Season with salt and pepper, garnish, and serve.

Notes

Add lemon juice before serving for extra brightness. Soup thickens over time, so add broth when reheating.
