Lemon Poppy Seed Loaf
  • 2 cups all-purpose flour
  • 1 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup unsalted butter softened
  • 1 cup granulated sugar
  • 3 eggs
  • 2 tbsp lemon zest
  • 1/4 cup lemon juice
  • 1/2 cup milk
  • 1 tsp vanilla extract
Lemon Glaze
  • 1 cup powdered sugar
  • 3 tbsp lemon juice

Method
 

  1. Preheat oven to 175°C and prepare a loaf pan.
  2. Mix dry ingredients in a bowl.
  3. Cream butter and sugar until fluffy.
  4. Add eggs, lemon zest, juice, and vanilla.
  5. Combine wet and dry ingredients with milk.
  6. Pour batter into pan and bake for 50–60 minutes.
  7. Cool completely and drizzle with glaze before serving.

Notes

Use fresh lemons for best flavor and avoid overmixing for a tender crumb.
