Ingredients
  

Chicken
  • 2 chicken breasts boneless skinless
  • 2 tbsp olive oil
  • 1 lemon juice from 1 lemon
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 1 tsp oregano
  • 1 tsp thyme
  • 0.5 tsp paprika
  • salt and pepper to taste
Quinoa
  • 1 cup quinoa rinsed
  • 2 cups water or broth
Veggies
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 2 cups spinach
  • 1 avocado sliced
  • 0.5 cup carrots shredded
Dressing
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 tsp honey
  • 1-2 tbsp warm water to thin

Equipment

  • Mixing bowls

Method
 

  1. Cook quinoa with water and salt until fluffy.
  2. Mix marinade ingredients and coat chicken.
  3. Cook chicken in skillet until golden and fully cooked.
  4. Whisk dressing ingredients until smooth.
  5. Assemble bowls with quinoa, veggies, chicken, and drizzle dressing.
